Ingredients

- 1 box chickpea pasta (or preferred pasta)
- 2 cups pasta sauce
- 1 tbsp olive oil
- 1 bag frozen mixed vegetables
- 4 fully cooked chicken sausages, sliced
Instructions
- Cook pasta until al dente, then drain.
- In a skillet, heat olive oil and sauté vegetables with chicken sausage until warmed through.
- Divide pasta into containers, top with sausage and veggies.
- Spoon pasta sauce over each bowl.
- Cool, seal, refrigerate, and reheat when ready to serve.
Notes
Use glass containers for best reheating. Add chili flakes or pesto for variation. Lasts 4 days in the fridge or up to 2 months frozen.
