- 200 g digestive or graham crackers
- ½ teaspoon ground nutmeg
- 1½ teaspoons ground cinnamon
- 1½ tablespoons dark brown sugar
- 50 g melted butter
- 150 g apple, diced small (1–2 apples)
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 100 g all-purpose flour
- 80 g dark brown sugar
- 70 g butter, room temperature
- 600 g full-fat cream cheese, room temperature
- 200 g granulated sugar
- 150 g sour cream (14–18%), room temperature
- 1 tablespoon cornstarch
- 2 teaspoons vanilla extract
- 3 large eggs, room temperature
Instructions
- Preheat oven to 160ºC (325ºF).
- Blend cookies, nutmeg, cinnamon, and brown sugar in a food processor. Add melted butter and blend until crumbly.
- Press mixture into the base and sides of a 22 cm (9 inch) springform pan lined with parchment paper. Bake for 10 minutes and let cool.
- Toss diced apples with sugar and cinnamon. Let sit to draw out moisture.
- In a separate bowl, mix flour, brown sugar, and butter until crumbly. Set both aside.
- Beat cream cheese on low for 1 minute. Gradually add sugar and mix until smooth.
- Combine sour cream, cornstarch, and vanilla, then mix into the cream cheese.
- Add eggs one at a time, mixing gently. Scrape down sides and mix once more.
- Pour filling over cooled crust. Top with cinnamon-sugar apples, followed by crumble topping.
- Place pan inside a larger cake pan, then into a roasting pan filled with boiling water (or wrap pan in foil for a water bath).
- Bake at 160ºC for 1 hour 20–30 minutes until the center is slightly wobbly.
- Turn off oven, crack door, and cool cheesecake inside for 1 hour.
- Let cool on a rack to room temp, then chill in fridge for at least 6 hours or overnight.
Notes
For clean slices, use a sharp knife and wipe between cuts. Add chopped nuts for crunch or make it gluten-free with alternative ingredients.
