Description

A decadent dessert layering warm spiced apples, creamy cheesecake, and a buttery crumble over a cinnamon-nutmeg cookie crust—perfect for fall celebrations or cozy indulgences.


Ingredients

  • 200 g digestive or graham crackers
  • ½ teaspoon ground nutmeg
  • 1½ teaspoons ground cinnamon
  • 1½ tablespoons dark brown sugar
  • 50 g melted butter
  • 150 g apple, diced small (12 apples)
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 100 g all-purpose flour
  • 80 g dark brown sugar
  • 70 g butter, room temperature
  • 600 g full-fat cream cheese, room temperature
  • 200 g granulated sugar
  • 150 g sour cream (14–18%), room temperature
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat oven to 160ºC (325ºF).
  2. Blend cookies, nutmeg, cinnamon, and brown sugar in a food processor. Add melted butter and blend until crumbly.
  3. Press mixture into the base and sides of a 22 cm (9 inch) springform pan lined with parchment paper. Bake for 10 minutes and let cool.
  4. Toss diced apples with sugar and cinnamon. Let sit to draw out moisture.
  5. In a separate bowl, mix flour, brown sugar, and butter until crumbly. Set both aside.
  6. Beat cream cheese on low for 1 minute. Gradually add sugar and mix until smooth.
  7. Combine sour cream, cornstarch, and vanilla, then mix into the cream cheese.
  8. Add eggs one at a time, mixing gently. Scrape down sides and mix once more.
  9. Pour filling over cooled crust. Top with cinnamon-sugar apples, followed by crumble topping.
  10. Place pan inside a larger cake pan, then into a roasting pan filled with boiling water (or wrap pan in foil for a water bath).
  11. Bake at 160ºC for 1 hour 20–30 minutes until the center is slightly wobbly.
  12. Turn off oven, crack door, and cool cheesecake inside for 1 hour.
  13. Let cool on a rack to room temp, then chill in fridge for at least 6 hours or overnight.

Notes

For clean slices, use a sharp knife and wipe between cuts. Add chopped nuts for crunch or make it gluten-free with alternative ingredients.
