- 2 cups cottage cheese
- 3 large eggs
- 2 cups frozen mixed vegetables (like peas, carrots, corn)
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil (for greasing the pan)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch casserole dish with olive oil.
- In a large bowl, whisk together cottage cheese and eggs until smooth.
- Add garlic powder, onion powder, salt, and pepper. Fold in thawed frozen vegetables and half the cheddar cheese.
- Pour the mixture into the prepared dish. Spread evenly and top with remaining cheese.
- Bake for 30–35 minutes, or until center is set and top is golden brown.
- Let cool slightly before slicing. Garnish with fresh herbs if desired.
Notes
For variation, use fresh sautéed vegetables, add herbs like thyme or basil, or swap in different cheeses like mozzarella or parmesan. Great for meal prep and freezes well.
