- 2 tbsp unsalted butter
- ½ onion, diced
- 10 oz refrigerated biscuit dough, cut into 2-inch pieces
- 1 lb breakfast sausage
- 5 eggs
- ½ cup whole milk or heavy cream
- 1 tsp oregano
- 1½ cups shredded cheddar cheese
- 1½ cups prepared country gravy
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Melt butter in a skillet over medium heat. Add diced onion and sauté until soft, about 3-4 minutes. Add sausage and cook until browned, breaking it up with a spatula. Drain excess grease.
- Layer biscuit dough pieces evenly in the baking dish. Spread the cooked sausage and onion mixture over the biscuits.
- In a bowl, whisk together eggs, milk, oregano, salt, and pepper. Pour over sausage layer, allowing it to soak into the biscuits.
- Sprinkle shredded cheddar cheese over the top. Prepare gravy and pour 1½ cups of warm gravy over the casserole.
- Bake for 30–40 minutes, or until eggs are set and top is golden. Let rest for 5 minutes before serving. Serve warm with extra gravy if desired.
