Description

This Brown Sugar Pumpkin Loaf is a moist and spiced pumpkin bread topped with a rich brown sugar glaze. Perfect for fall baking, Thanksgiving, or cozy autumn nights!


Ingredients

  • 1 cup whole wheat pastry flour (or all-purpose)
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 1/2 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp ground nutmeg
  • 3/4 tsp ground cloves
  • 3/4 cup light brown sugar
  • 1/3 cup olive oil (or vegetable oil)
  • 2 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup pumpkin puree
  • 3/4 cup almond milk

Brown Sugar Glaze:

  • 3/4 cup light brown sugar
  • 6 tbsp milk
  • 3 tbsp butter
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Line a loaf pan with parchment paper.
  2. Mix dry ingredients in one bowl, wet ingredients in another. Combine until smooth.
  3. Pour batter into loaf pan and bake 50–60 minutes. Cool completely.
  4. Heat brown sugar, butter, and milk until boiling. Remove from heat, whisk in powdered sugar. Cool 15 minutes.
  5. Pour glaze over loaf, let set, and slice.

Notes

For variations, add chopped pecans, chocolate chips, or use maple syrup in the glaze. Store leftovers in fridge for 5 days.
