Description
This Brown Sugar Pumpkin Loaf is a moist and spiced pumpkin bread topped with a rich brown sugar glaze. Perfect for fall baking, Thanksgiving, or cozy autumn nights!
Ingredients

- 1 cup whole wheat pastry flour (or all-purpose)
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 1 1/2 tbsp ground cinnamon
- 1 1/2 tsp ground ginger
- 1 1/2 tsp ground nutmeg
- 3/4 tsp ground cloves
- 3/4 cup light brown sugar
- 1/3 cup olive oil (or vegetable oil)
- 2 tsp vanilla extract
- 2 large eggs
- 3/4 cup pumpkin puree
- 3/4 cup almond milk
Brown Sugar Glaze:
- 3/4 cup light brown sugar
- 6 tbsp milk
- 3 tbsp butter
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F. Line a loaf pan with parchment paper.
- Mix dry ingredients in one bowl, wet ingredients in another. Combine until smooth.
- Pour batter into loaf pan and bake 50–60 minutes. Cool completely.
- Heat brown sugar, butter, and milk until boiling. Remove from heat, whisk in powdered sugar. Cool 15 minutes.
- Pour glaze over loaf, let set, and slice.
Notes
For variations, add chopped pecans, chocolate chips, or use maple syrup in the glaze. Store leftovers in fridge for 5 days.
