  • 4 cups baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • 1½ cups shredded cheddar cheese (or blend of cheeses)
  • ½ cup sour cream (optional, for serving)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and cut baby potatoes. Slice smoked sausage into ¼-inch rounds.
  2. In a small bowl, mix together ranch seasoning, garlic powder, onion powder, and black pepper. Toss potatoes in olive oil and half of the seasoning mix until well coated.
  3. Line a baking sheet with parchment or grease lightly. Spread the seasoned potatoes in a single layer. Top evenly with sliced sausage.
  4. Roast for 35–40 minutes, stirring halfway through. When potatoes are tender and golden, sprinkle with cheddar cheese. Return to oven for 5 more minutes until cheese is melted and bubbly.
  5. Top with fresh parsley and a dollop of sour cream if desired. Serve warm and enjoy!

Notes
