- 4 cups baby potatoes, halved or quartered
- 2 tbsp olive oil
- 1 packet ranch seasoning mix (halal-certified)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- 1½ cups shredded cheddar cheese (or blend of cheeses)
- ½ cup sour cream (optional, for serving)
- Chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Wash and cut baby potatoes. Slice smoked sausage into ¼-inch rounds.
- In a small bowl, mix together ranch seasoning, garlic powder, onion powder, and black pepper. Toss potatoes in olive oil and half of the seasoning mix until well coated.
- Line a baking sheet with parchment or grease lightly. Spread the seasoned potatoes in a single layer. Top evenly with sliced sausage.
- Roast for 35–40 minutes, stirring halfway through. When potatoes are tender and golden, sprinkle with cheddar cheese. Return to oven for 5 more minutes until cheese is melted and bubbly.
- Top with fresh parsley and a dollop of sour cream if desired. Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F or microwave in short bursts. Not freezer-friendly due to potato texture.
