Ingredients

  • 10 slices white sandwich bread
  • 3 tbsp butter, melted
  • 3 tbsp brown sugar
  • 2 tbsp ground cinnamon
  • 3 large eggs
  • 1 tbsp milk
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 23 tbsp butter, for frying

Instructions

  1. Remove crusts from each bread slice. Flatten slices with a rolling pin.
  2. Mix melted butter, brown sugar, and 2 tbsp cinnamon in a small bowl. Spread over each bread slice, leaving a small edge.
  3. Tightly roll each slice and gently press the edge to seal.
  4. In a shallow bowl, whisk eggs, milk, ½ tsp cinnamon, and vanilla.
  5. Heat a non-stick skillet over medium heat. Melt 2–3 tbsp butter. Dip each roll-up into the egg mixture, then place seam-side down in skillet. Cook for 2–3 minutes total, turning to brown all sides evenly.

Notes

Store in an airtight container in the fridge for up to 3 days. Freeze after cooking for up to 1 month. Reheat in a toaster oven, skillet, or microwave. Serve with powdered sugar, maple syrup, cream cheese glaze, or fruit.
