Ingredients

  • 1 tsp olive oil
  • 1 lbs boneless chicken breasts or thighs, diced
  • 2 tsp Italian seasoning, divided
  • Salt & pepper, to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup sun-dried tomatoes, chopped
  • 3 garlic cloves, minced
  • ¼ cup flour
  • 2 tbsp tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz small pasta shells
  • 1 cup heavy cream
  • ½1 cup grated Parmesan Reggiano
  • 3 cups fresh spinach

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Add diced chicken, 1 tsp Italian seasoning, salt, and pepper. Cook until browned.
  3. Add carrots, celery, onions, sun-dried tomatoes, and garlic. Cook for 3–4 minutes.
  4. Sprinkle in flour and stir to coat. Add tomato paste if using.
  5. Slowly pour in chicken broth while stirring, deglazing the pot as needed.
  6. Bring to a boil. Stir in pasta and remaining Italian seasoning.
  7. Reduce heat, cover, and simmer for 20 minutes until chicken is tender and pasta is al dente.
  8. Stir in heavy cream, Parmesan, and spinach. Simmer for 5 more minutes.
  9. Taste and adjust salt and pepper before serving.

Notes

Use half & half for a lighter version. Skip tomato paste for a creamy base without tomato flavor. Boil pasta separately if making ahead to avoid mushiness. Stir in cream cheese for extra thickness.
