Creamy White Chicken Chili is rich, hearty, and absolutely delicious. Made with tender chicken, beans, green chiles, and a creamy broth, it’s the ultimate cozy comfort food.


Ingredients

  • 1 pound rotisserie chicken, shredded
  • 1 medium chopped onion
  • 1 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 cans (15 oz) Great Northern beans, drained and rinsed
  • 14 1/2 oz chicken broth
  • 2 cans (4 oz) diced green chiles
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream

Instructions

  1. In a large saucepan, sauté onion and garlic powder in olive oil until onion is translucent.
  2. Add shredded chicken, beans, broth, chiles, and seasonings. Bring to a boil.
  3. Reduce heat and simmer uncovered for 30 minutes.
  4. Remove from heat and stir in sour cream and heavy cream.
  5. Ladle into bowls and top with cheese, tortilla chips, lime, or jalapeños.

Notes

Mash one can of beans before adding for a thicker chili. Add cream cheese for extra richness. Best eaten fresh — dairy-based soups do not freeze well.
