- 1 pound rotisserie chicken, shredded
- 1 medium chopped onion
- 1 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 cans (15 oz) Great Northern beans, drained and rinsed
- 14 1/2 oz chicken broth
- 2 cans (4 oz) diced green chiles
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup sour cream
- 1/2 cup heavy whipping cream
Instructions
- In a large saucepan, sauté onion and garlic powder in olive oil until onion is translucent.
- Add shredded chicken, beans, broth, chiles, and seasonings. Bring to a boil.
- Reduce heat and simmer uncovered for 30 minutes.
- Remove from heat and stir in sour cream and heavy cream.
- Ladle into bowls and top with cheese, tortilla chips, lime, or jalapeños.
Notes
Mash one can of beans before adding for a thicker chili. Add cream cheese for extra richness. Best eaten fresh — dairy-based soups do not freeze well.
