- 3–4 boneless, skinless chicken breasts, chopped into bite-sized pieces
- 3 cloves fresh garlic, minced
- 1-inch piece fresh ginger, peeled and minced
- 1 cup full-fat coconut milk
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- Bell peppers and carrots, thinly sliced (to taste)
- Low-sodium soy sauce, to taste
- Oil for sautéing
Instructions
- Chop chicken, mince garlic and ginger. Slice bell peppers and carrots into thin strips.
- Heat oil in a large pot over medium heat. Add garlic and ginger; cook for 1 minute until fragrant.
- Add chicken pieces and cook until no longer pink, about 5 minutes.
- Pour in chicken broth and coconut milk; stir to combine.
- Add bell peppers and carrots; simmer for 10 minutes until vegetables are tender.
- Remove from heat, stir in lime juice and soy sauce. Adjust seasoning to taste and serve hot.
Notes
For extra heat, add chili paste or Sriracha. Add spinach, mushrooms, or snap peas for more veggies. Marinating the chicken overnight deepens the flavor.
