- 1 lb breakfast sausage

- For Sawmill Gravy:
- ¼ cup sausage drippings (or add butter if needed)
- ¼ cup all-purpose flour
- 2 cups milk
- ½ tsp salt (or to taste)
- ¼ tsp black pepper (or to taste)
Instructions
- Brown breakfast sausage in a skillet until fully cooked. Remove sausage and reserve ¼ cup of drippings for gravy.
- In the same skillet, whisk flour into the drippings over medium heat to form a roux. Cook until golden, about 5–10 minutes. Slowly whisk in milk. Stir until thickened. Season with salt and pepper.
- Lightly toast English muffins while the gravy is cooking. This keeps them from getting soggy.
- Whisk eggs with a dash of milk and scramble gently in a non-stick skillet until soft and fluffy.
- Preheat the broiler. On a baking sheet, layer each muffin half with sawmill gravy, scrambled eggs, crumbled sausage, and a slice of cheddar cheese.
- Place under the broiler just until the cheese is bubbly and lightly golden (1–2 minutes). Serve hot and enjoy!
