  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme (or 1 tsp fresh thyme)
  • 1/2 cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes, sliced 1/4-inch thick
  • 1 tbsp butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, mozzarella)
  • 1/2 cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Crispy fried onions (optional garnish)

Instructions

  1. Melt butter and oil in a skillet over medium-low heat. Add sliced onions, salt, pepper, sugar, garlic powder, and thyme. Cook for 20–25 minutes until golden and soft. Add broth, simmer 5 more minutes until jammy. Set aside.
  2. Preheat oven to 375°F (190°C). Grease a 9×13″ baking dish with butter. Slice potatoes into thin rounds and toss with cream, salt, pepper, and thyme.
  3. Layer half the potatoes in the baking dish. Top with half the onions, 1/2 cup Gruyère, and 1/4 cup Parmesan. Repeat with remaining layers. Pour leftover cream on top.
  4. Cover with foil and bake for 40 minutes. Uncover and bake another 20 minutes until bubbly and golden. Broil for 2–3 minutes for a crisp top.
  5. Let rest 5 minutes. Garnish with thyme, extra cheese, or crispy onions. Serve hot and enjoy.
