  • Total Time: 45 minutes
  • Yield: 1620 pinwheels 1x

Description

These Fresh Vegetable Tortilla Roll Ups are your new go-to for easy, make-ahead lunches and colorful, crowd-pleasing appetizers. Made with a creamy, herb-seasoned spread and packed with finely diced raw vegetables, each bite is full of flavor, crunch, and vibrant color.

Ingredients

Scale
  • 1 cup finely diced vegetables (broccoli, carrots, red bell pepper)
  • 4 oz cream cheese, softened
  • 1/3 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/4 tsp dried dill
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 2 large burrito-sized flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sliced green onions

Instructions

  1. Finely dice all vegetables (around ¼-inch pieces or smaller). In a mixing bowl, combine cream cheese, mayo, garlic powder, dill, salt, and pepper. Stir until smooth.
  2. Microwave tortillas for 15–20 seconds until slightly warm and pliable. Spread the cream cheese mixture evenly over each tortilla, leaving a ½-inch border. Sprinkle on the chopped vegetables, shredded cheese, and green onions.
  3. Roll each tortilla tightly from one end to the other. Wrap in plastic wrap and chill for at least 20 minutes, or overnight for best results.
  4. Remove from the fridge and slice into ¾–1-inch pinwheels. Arrange on a platter, secure with toothpicks if needed, and serve.

Notes

  • Store wrapped in plastic wrap inside an airtight container in the fridge for up to 3 days.
  • Mix the filling a day in advance and store separately.
  • Pat vegetables dry to avoid soggy tortillas.
  • Try other veggies like cucumber, cauliflower, or corn. Swap cheeses or spreads as desired.
  • Slice just before serving for best presentation.
