- 1 cup finely diced vegetables (broccoli, carrots, red bell pepper)
- 4 oz cream cheese, softened
- 1/3 cup mayonnaise
- 1/2 tsp garlic powder
- 1/4 tsp dried dill
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 2 large burrito-sized flour tortillas
- 1/2 cup shredded cheddar cheese
- 2 tbsp sliced green onions
Instructions
- Finely dice all vegetables (around ¼-inch pieces or smaller). In a mixing bowl, combine cream cheese, mayo, garlic powder, dill, salt, and pepper. Stir until smooth.
- Microwave tortillas for 15–20 seconds until slightly warm and pliable. Spread the cream cheese mixture evenly over each tortilla, leaving a ½-inch border. Sprinkle on the chopped vegetables, shredded cheese, and green onions.
- Roll each tortilla tightly from one end to the other. Wrap in plastic wrap and chill for at least 20 minutes, or overnight for best results.
- Remove from the fridge and slice into ¾–1-inch pinwheels. Arrange on a platter, secure with toothpicks if needed, and serve.
Notes
- Store wrapped in plastic wrap inside an airtight container in the fridge for up to 3 days.
- Mix the filling a day in advance and store separately.
