- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 8 oz fettuccine or linguine
- 1 cup freshly grated parmesan cheese
- ½ cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add chicken and season with salt and pepper. Sear for 5–7 minutes until golden and fully cooked.
- Add minced garlic to the skillet and cook for 1 minute until fragrant. Stir in heavy cream, the remaining 2 tablespoons of butter, and grated parmesan. Stir gently until the cheese melts and a creamy sauce forms.
- Boil pasta according to package directions until al dente. Before draining, reserve about ½ cup of pasta water.
- Toss the drained pasta into the skillet with chicken and sauce. Add a splash of reserved pasta water to loosen the sauce, if needed. Stir to coat everything evenly.
- Top with chopped parsley for a fresh finish and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream or milk. Not freezer-friendly due to cream sauce.
