- For the Beef:
- 1 lb ground beef or thin beef strips
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- ¼ cup honey
- ⅓ cup BBQ sauce
- 1 tsp smoked paprika
- Salt & pepper, to taste
- For the Creamy Taco Sauce:
- ½ cup mayonnaise
- 2 tbsp honey
- 1 tbsp BBQ sauce
- ½ tsp smoked paprika
- For Assembly:
- 6 soft taco tortillas
- 1 cup shredded cheddar cheese
- Chopped fresh cilantro (optional)
Instructions
- Melt butter in a skillet over medium heat. Add minced garlic and sauté 1–2 minutes until golden and fragrant.
- Add beef and cook until browned and fully cooked through. Break it up as it cooks. Drain excess fat if needed.
- Stir in honey, BBQ sauce, smoked paprika, salt, and pepper. Mix to coat and simmer 2–3 minutes to thicken slightly.
- In a small bowl, whisk together mayo, honey, BBQ sauce, and paprika for the creamy sauce.
- Warm tortillas. Fill each with beef, drizzle with creamy sauce, add shredded cheese, and top with cilantro if using.
- Fold and serve warm while the cheese is melty and gooey.
Notes
Use turkey, chicken, or plant-based meat instead of beef. Add jalapeños or hot sauce for heat. Store cooked beef mixture in fridge for 3 days or freeze for 3 months. Keep tacos warm in foil at 200°F for a crowd.
