Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tbsp olive oil
  • 1 lb Yukon gold potatoes, cut into ½-inch cubes
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp sea salt, plus more to taste
  • ¼ tsp ground black pepper, plus more to taste
  • lb sirloin steak, cut into ½-inch cubes
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee or butter.
  2. Once melted, add potatoes and sprinkle with garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes before the first stir, then continue cooking for 8–10 minutes, stirring every 1–2 minutes until potatoes are golden brown and fork tender.
  3. Remove potatoes and browned bits. Increase heat to medium-high. Add remaining 2 tablespoons of ghee, then the steak bites. Season with a dash of salt and pepper. Let them sear undisturbed for 2 minutes, then stir and cook for another 1–2 minutes until browned and just cooked through.
  4. Return potatoes to the pan, stir to combine, and season to taste. Top with fresh parsley and serve hot.

Notes

Store in an airtight container in the fridge for up to 3 days. Reheat in a skillet for best texture. Freezing is not ideal as potatoes may lose texture.
