Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis
  • 1 tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3–4 minutes until translucent. Add garlic and cook 30 seconds.
  2. Add ground turkey and cook 6–8 minutes, breaking it up, until browned.
  3. While turkey cooks, slice zucchinis into 1/4-inch half moons.
  4. Stir zucchini into skillet and cook 4–5 minutes until tender but not mushy.
  5. Add oregano, salt, pepper, and red pepper flakes. Stir in chicken broth. Simmer on low for 3–4 minutes.
  6. Sprinkle Parmesan over skillet. Stir to melt and distribute. Let rest 5 minutes off heat.
  7. Serve warm with extra Parmesan if desired. Pairs well with rice, quinoa, or crusty bread.

Notes

Use minimal broth to prevent excess moisture. Swap herbs or broth type to vary flavor. Sauté zucchini separately for firmer texture.
