- 1 cup pumpkin puree
- 1/2 cup honey or pure maple syrup
- 1/3 cup melted butter
- 2 large eggs
- 1/4 cup milk of choice (dairy or plant-based)
- 1 3/4 cups white whole wheat flour (or all-purpose flour)
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/8 tsp ground cloves
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Melt butter, then whisk it with pumpkin puree and maple syrup in a large bowl.
- Add eggs, milk, and vanilla extract, and whisk until smooth.
- In a separate bowl, whisk together flour, spices, baking soda, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture using a spatula. Do not overmix.
- Pour batter into a greased 9×5-inch loaf pan.
- Bake at 350°F (175°C) for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 minutes before slicing. Serve warm or at room temperature.
Notes
For extra variation, try adding chocolate chips, chopped nuts, or dried cranberries. You can also use the batter to make muffins – bake for 15–18 minutes at the same temperature.
