  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • ½ cup ranch dressing
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried parsley (or fresh, chopped)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)
  • Wooden or metal skewers

Instructions

  1. Make the Marinade: Mix ranch, Parmesan, garlic, olive oil, parsley, pepper, garlic powder, and lemon juice in a bowl.
  2. Marinate the Chicken: Coat chicken cubes in the marinade. Chill 30 minutes to 2 hours.
