Description

Leftover Mashed Potato Cheese Puffs are golden, cheesy bites with a crisp exterior and gooey interior. Perfect as a side, snack, or appetizer—zero waste and full of flavor!


Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or preferred)
  • 1/4 cup all-purpose flour
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp chopped chives
  • 1/3 cup sour cream
  • Salt, to taste
  • 2 eggs, beaten

Instructions

  1. Preheat oven to 400°F (200°C). Grease a muffin tin.
  2. In a bowl, mix eggs and sour cream. Stir in shredded cheese, Parmesan, chives, and salt.
  3. Fold in mashed potatoes until well combined.
  4. Spoon mixture into muffin cups, filling each to the top. Bake 20–25 minutes until puffed and golden.
  5. Cool slightly before removing. Serve warm as a side or savory snack.
