Lemon Crumb Bars are a sunshine-filled treat with a buttery oat crumble and silky lemon filling. Easy to make with pantry staples, they’re perfect for brunches, picnics, or anytime you need a zesty pick-me-up.

- For the Crumb Layers:
- 1¼ cups all-purpose flour
- 1¼ cups old-fashioned rolled oats
- ½ tsp salt
- ½ tsp baking soda
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- ¾ cup unsalted butter, melted
- 1 tsp vanilla extract
- For the Lemon Filling:
- 1 (14 oz) can sweetened condensed milk
- 2 tbsp lemon zest
- ½ cup fresh lemon juice
- 2 large egg yolks
Instructions
- Prep the Pan: Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line with parchment paper.
- Make the Crumble: In a large bowl, combine flour, oats, salt, baking soda, and both sugars. Pour in melted butter and vanilla, then mix until crumbly.
- Form the Crust: Press half the crumb mixture firmly into the bottom of the pan. Bake for 15 minutes, then remove from the oven.
- Make the Lemon Filling: In another bowl, whisk together condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
- Assemble & Bake: Pour the lemon filling over the baked crust. Sprinkle the remaining crumble mixture evenly over the top. Bake for 20–22 minutes, or until lightly golden.
- Cool & Slice: Let cool completely, then refrigerate for at least 1 hour. For cleaner slices, cut while chilled or slightly frozen.
Notes
Try white chocolate dipping, add berry preserves, or include chopped nuts in the topping. Store in fridge up to 5 days or freeze individually for 3 months. Chill fully for neat slicing.
