  • Total Time: 2 hours 45 minutes
  • Yield: 18 truffles 1x

Description

Lemon Truffles are no-bake, zesty treats with smooth centers of white chocolate and lemon, rolled in powdered sugar—perfect for gifting or enjoying with tea.

Ingredients

Scale
  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons freshly squeezed lemon juice
  • Zest from 2 lemons
  • 2 cups powdered sugar
  • Yellow food coloring (optional)

Instructions

  1. Place white chocolate chips and butter in a heatproof bowl.
  2. Warm heavy cream in a saucepan until just simmering.
  3. Pour hot cream over the chocolate and butter. Let sit for 1 minute, then stir until smooth.
  4. Stir in lemon juice and zest until incorporated.
  5. Gradually mix in powdered sugar until a thick, smooth mixture forms. Add food coloring if desired.
  6. Cover and refrigerate for at least 2 hours.
  7. Roll mixture into bite-sized balls and coat in powdered sugar.
  8. Refrigerate for 30 minutes before serving.

Notes

Use fresh lemon juice for best flavor. Chill thoroughly before shaping. Dust with powdered sugar just before serving for a clean look.
