Fresh, tangy, and colorful—this Marinated Cucumbers, Onions, and Tomatoes recipe is a no-cook, make-ahead side dish bursting with summer flavor.


Ingredients

  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh parsley or dill
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Wash and slice cucumbers and onion. Halve the cherry or grape tomatoes.
  2. In a separate bowl, whisk together vinegar, olive oil, garlic, salt, pepper, and red pepper flakes if using.
  3. Add vegetables to a large bowl. Pour vinaigrette over and toss gently.
  4. Cover and refrigerate for at least 30 minutes or up to overnight.
  5. Toss again before serving and garnish with fresh parsley or dill.

Store in an airtight container for up to 3 days. Stir during marination for even flavor.
