- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 cup breadcrumbs
Instructions
- Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine mashed potatoes, cheddar cheese, eggs, flour, salt, pepper, and garlic powder. Stir until everything is well mixed.
- Using your hands or a cookie scoop, form the mixture into golf ball-sized rounds.
- Roll each puff in breadcrumbs until fully coated, pressing gently to help them stick.
- Place the puffs on the prepared baking sheet and bake for 20–25 minutes, or until golden brown and crispy.
- Let cool for a few minutes. Serve with your favorite dipping sauces—sour cream, ranch, or spicy aioli.
Notes
Store leftovers in an airtight container for up to 3 days. Freeze unbaked or baked puffs in a single layer, then transfer to a freezer bag. Reheat in the oven at 375°F for 10–12 minutes, or air fry for extra crispiness.
