Description

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup breadcrumbs

Instructions

  1. Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine mashed potatoes, cheddar cheese, eggs, flour, salt, pepper, and garlic powder. Stir until everything is well mixed.
  3. Using your hands or a cookie scoop, form the mixture into golf ball-sized rounds.
  4. Roll each puff in breadcrumbs until fully coated, pressing gently to help them stick.
  5. Place the puffs on the prepared baking sheet and bake for 20–25 minutes, or until golden brown and crispy.
  6. Let cool for a few minutes. Serve with your favorite dipping sauces—sour cream, ranch, or spicy aioli.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze unbaked or baked puffs in a single layer, then transfer to a freezer bag. Reheat in the oven at 375°F for 10–12 minutes, or air fry for extra crispiness.
