Description
This Garlic Parmesan Chicken Meatloaf is a game-changer for dinner routines. Juicy, tender, and bursting with bold garlic and cheesy parmesan flavor, it’s a lighter twist on a comfort food classic.
Ingredients
Scale
- 1 lb lean ground chicken
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 1/4 cup ketchup (for topping)
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish or line with parchment paper.
- In a large bowl, combine ground chicken, garlic, parmesan, breadcrumbs, eggs, chopped onion, salt, and pepper. Mix gently until just combined—don’t overwork it.
- Form the mixture into a loaf shape and place in the prepared dish. Spread ketchup evenly over the top for a sweet, tangy glaze.
- Bake for 45–50 minutes, or until the internal temperature reaches 165°F (75°C). Let the meatloaf rest for 5 minutes before slicing.
Notes
Store leftovers in an airtight container for up to 4 days. Slice and freeze for up to 2 months. Reheat gently in the oven or microwave. Great for meal prep with veggies or rice.
