- 8 cups peeled and thinly sliced fresh peaches
- ½ cup granulated sugar
- ½ cup + 2 tbsp all-purpose flour, divided
- 1 tbsp cornstarch
- 2 tsp ground cinnamon, divided
- ¼ tsp salt
- ¾ cup packed light brown sugar
- ½ cup (1 stick) salted butter, room temperature
- 1 ¾ cup old-fashioned oats
Instructions
- Preheat oven to 400°F (200°C). Butter a 9×9-inch baking pan and set aside.
- In a large bowl, combine peaches, granulated sugar, 2 tbsp flour, cornstarch, 1 tsp cinnamon, and salt. Toss until peaches are well coated. Pour into the prepared pan.
- In the same bowl, cream together brown sugar, remaining ½ cup flour, butter, and remaining 1 tsp cinnamon until clumpy. Add oats and mix into a coarse crumble.
- Evenly crumble oat topping over the peaches. Bake for 20-25 minutes, or until topping is golden and peach filling is bubbling.
- Remove from oven and let rest for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream.
Notes
Use firm, ripe peaches for best texture. Frozen peaches can be used if thawed and drained. Resting time allows the filling to thicken. Make gluten-free by substituting flour with a gluten-free blend. Double the recipe to serve a crowd using a 9×13-inch pan.
