- For the Soup Base:
- ½ tbsp olive oil
- 1 lb ground chicken
- 2 tsp Italian seasoning
- 3 garlic cloves, minced
- 1 tbsp chopped Calabrian peppers (optional, for heat)
- 4 cups low-sodium chicken broth
- 8 oz farfalle (bowtie pasta)
- 1 cup frozen peas
- 2 oz Parmesan cheese, grated
- For the Ricotta Sauce:
- 15 oz low-fat ricotta
- ½ cup milk
- Juice of 2 lemons + zest of 1 lemon
- Black pepper, to taste
Instructions
- Brown the Chicken: In a large Dutch oven, heat olive oil over medium-high. Add ground chicken and cook undisturbed for 3–4 minutes. Break it up and cook through. Stir in Italian seasoning, garlic, and Calabrian peppers.
- Add Pasta & Broth: Deglaze with a few tablespoons of broth, then pour in the rest along with the pasta. Stir, cover, and cook for 10 minutes, stirring occasionally.
- Blend the Ricotta Sauce: In a blender or with an immersion blender, combine ricotta, milk, lemon juice, and zest until smooth.
- Finish the Soup: Turn off heat. Stir in peas to warm them through. Add ricotta sauce and Parmesan, mix until creamy and smooth.
- Serve & Garnish: Top with extra Parmesan, black pepper, or a squeeze of lemon. Serve hot with garlic bread or salad.
Notes
