  • 1½ cups beef broth
  • 1 can (15 oz) corn, drained
  • 8 oz tomato sauce
  • ½ cup salsa
  • 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef and diced onion with a pinch of salt and pepper until the beef is fully browned. Drain any excess fat.
  2. Return the skillet to the stove. Stir in taco seasoning and garlic powder to coat the beef evenly.
  3. Add the uncooked rice, beef broth, corn, tomato sauce, and salsa. Stir well to combine.
  4. Bring the mixture to a gentle boil. Once boiling, cover the skillet, reduce heat to low, and let it simmer for 18–20 minutes, or until the rice is fully cooked and tender.
