Description

Pancake Sausage Casserole is the kind of breakfast that makes mornings feel extra special—fluffy, savory, and just a touch sweet. Perfect for meal prep or a cozy brunch.


Ingredients

  • 2 cups pancake mix
  • 1 1/4 cups milk
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 lb chicken sausage, cooked and crumbled
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tbsp melted butter
  • 1 tbsp maple syrup (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch or 9×13-inch baking dish.
  2. In a large bowl, whisk together pancake mix, milk, egg, and vanilla until smooth. Stir in melted butter and maple syrup, if using.
  3. Pour half the batter into the dish. Sprinkle sausage over it. Add cheese if using. Pour remaining batter on top and spread evenly.
  4. Bake for 25–30 minutes until golden and set. Let cool 5 minutes before slicing.
  5. Serve warm with butter and syrup or hot sauce.

Notes

Store leftovers in the fridge for up to 4 days or freeze in portions. Reheat in the microwave or oven at 350°F.
