- 1 ½ cups crushed shortbread cookies
- 6 tbsp unsalted butter, melted
- 1 ½ cups sweetened shredded coconut, toasted
- 1 cup soft caramels, unwrapped
- 2 tbsp heavy cream
- ¾ cup semi-sweet chocolate chips
- ¼ tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
- Mix crushed shortbread cookies with melted butter until the texture resembles wet sand. Press evenly into the bottom and up the sides of the pie dish to form a crust.
- Bake the crust for 8-10 minutes until lightly golden. Let cool completely.
- In a saucepan over low heat, melt the caramels with heavy cream, stirring until smooth. Remove from heat and fold in toasted coconut and salt.
- Spread the caramel-coconut mixture evenly over the cooled crust.
- Melt chocolate chips in a microwave-safe bowl in 20-second increments until smooth.
- Drizzle the melted chocolate over the pie and refrigerate for at least 1 hour to set.
- Slice and serve chilled or at room temperature.
