- 1 lb sirloin or ribeye steak
- Salt and black pepper to taste
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1 tbsp olive oil
- Pasta:
- 12 oz fettuccine or your favorite pasta
- Sauce:
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- ½ cup crumbled Gorgonzola cheese
- ¼ tsp ground nutmeg
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and set aside.
- Season steak with salt, pepper, garlic powder, and rosemary. Heat olive oil in a skillet over medium-high heat. Sear steak for 3–5 minutes per side until cooked to desired doneness. Remove and let rest for 5 minutes before slicing.
- In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds. Pour in heavy cream and bring to a gentle simmer. Whisk in Parmesan, Gorgonzola, and nutmeg. Stir until cheeses are melted and sauce is smooth.
- Add cooked pasta to the sauce and toss to coat. Plate the pasta and top with sliced steak. Garnish with fresh parsley and extra Gorgonzola if desired.
Notes
Let steak rest before slicing to keep it juicy. Add a splash of pasta water if sauce needs thinning. Substitute Gorgonzola with blue cheese or goat cheese for a milder flavor. Add red pepper flakes for heat.
