  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice (uncooked)
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In the slow cooker, add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper. Stir to mix well.
  2. Place chicken thighs directly on top of the rice mixture.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and rice is fully cooked.
  4. Fluff rice with a fork, plate the chicken over the rice, and garnish with fresh parsley.

Notes

For a creamy twist, stir in butter or Parmesan before serving. Add veggies like spinach or peas for more color and nutrition. Use bone-in thighs for extra flavor — just remove the skin. Thin lemon slices on top of the chicken boost the citrus aroma.
