Ingredients
Scale
- 1 whole turkey (12–14 lbs), spatchcocked
- 1/2 cup unsalted butter, softened
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 1 tsp sage, chopped
- Zest of 1 lemon
- 2 tsp kosher salt
- 1 tsp black pepper
- Optional: slices of lemon and fresh herb sprigs for garnish
Instructions
Prep Time
- Prepare the Turkey: Preheat your oven to 375°F (190°C). If the turkey isn’t already spatchcocked, remove the backbone using kitchen shears and flatten the bird.
- Mix Butter Mixture: In a small bowl, combine softened butter, olive oil, garlic, rosemary, thyme, sage, lemon zest, salt, and pepper.
Cooking
- Season the Turkey: Gently loosen the skin and spread the butter mixture under and over the skin evenly.
- Roast: Place the turkey on a wire rack over a lined baking sheet. Roast in the preheated oven for approximately 1.5 to 2 hours, or until the breast reaches 165°F and the thighs reach 175°F.
- Rest: Remove the turkey from the oven and let it rest for 15–20 minutes before carving.
Serving
- Garnish: Arrange on a serving platter and garnish with lemon slices and herb sprigs for a festive presentation.
Notes
- For extra crispiness, pat the skin dry before seasoning.
- Brining the turkey overnight adds additional flavor and juiciness.
- Use a meat thermometer to ensure precise cooking.
