- 1 pound chicken breast, cubed
- 1 cup fresh pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon fresh ginger, grated
- Salt and pepper, to taste
- ¼ cup green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove and set aside.
- In the same skillet, sauté onion, garlic, and red bell pepper until softened.
- Add pineapple cubes and cook for 2 minutes.
- Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
- Return chicken to the skillet and mix well. Garnish with green onions and sesame seeds before serving.
Notes
For best flavor, use fresh pineapple. Store leftovers in airtight containers for up to 3 days—perfect for meal prep. Add chili flakes or sriracha if you like it spicy!
