- 1 lb chicken breast, cut into bite-sized pieces
- ½ cup sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 tsp minced ginger
- 1 bell pepper, sliced
- 1 cup broccoli florets
- Salt and pepper, to taste
- Sesame seeds, for garnish
- Green onions, sliced for garnish
Instructions
- In a bowl, mix sweet chili sauce, soy sauce, and cornstarch. Toss in the chicken pieces until well-coated. Let marinate for 15 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 7–10 minutes until browned and cooked through. Remove and set aside.
- In the same pan, add garlic, ginger, bell pepper, and broccoli. Sauté for 5–7 minutes until tender but still crisp.
- Return chicken to the skillet along with any remaining marinade. Stir everything together and cook for 2–3 minutes until heated through and saucy.
- Top with sesame seeds and sliced green onions. Serve over steamed rice or noodles for a complete meal.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or a skillet. Freeze in a sealed container for up to 2 months.
