Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • ½ cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Green onions, sliced for garnish

Instructions

  1. In a bowl, mix sweet chili sauce, soy sauce, and cornstarch. Toss in the chicken pieces until well-coated. Let marinate for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 7–10 minutes until browned and cooked through. Remove and set aside.
  3. In the same pan, add garlic, ginger, bell pepper, and broccoli. Sauté for 5–7 minutes until tender but still crisp.
  4. Return chicken to the skillet along with any remaining marinade. Stir everything together and cook for 2–3 minutes until heated through and saucy.
  5. Top with sesame seeds and sliced green onions. Serve over steamed rice or noodles for a complete meal.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or a skillet. Freeze in a sealed container for up to 2 months.
