- 12 oz penne pasta
- 2 boneless, skinless chicken breasts, cut into strips
- 1 tbsp Cajun seasoning (plus extra for garnish)
- 1 tbsp olive oil
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1 cup mozzarella, shredded
- ¼ cup Parmesan cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp crushed red pepper flakes (plus more for garnish)
- Salt to taste
- Chopped parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Add penne and cook until al dente. Drain and set aside.
- Toss chicken in Cajun seasoning. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add cream cheese and heavy cream. Stir until smooth and melted.
- Add garlic powder, onion powder, smoked paprika, and red pepper flakes. Stir and simmer.
- Add mozzarella and Parmesan. Stir until fully melted and creamy.
- Return chicken to the skillet and simmer for 2–3 minutes.
- Add cooked penne and stir to coat with sauce.
- Garnish with Cajun seasoning, red pepper flakes, and parsley. Serve hot.
Notes
Adjust spice level to taste. For extra veggies, try adding bell peppers or spinach. Use room temp cream cheese for best results.
