  • 2 tablespoons olive oil or avocado oil
  • 1.5 pounds boneless, skinless chicken breast, cubed
  • 2 teaspoons garlic salt (or salt, divided)
  • ½ teaspoon black pepper
  • 1 tablespoon fresh minced garlic
  • 13 oz full-fat unsweetened canned coconut cream (chilled, solid part only)
  • 1 cup chicken broth
  • ¼ cup nutritional yeast
  • 1 teaspoon dried oregano
  • 12 tablespoons arrowroot or potato starch (for thickening)
  • ⅓ cup sun-dried tomatoes, drained, blotted, and chopped
  • ½ oz fresh basil (optional, for garnish)

Instructions

  1. Prepare the chicken

    Heat oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook for 5–7 minutes until golden brown and cooked through. Add garlic in the last minute of cooking until fragrant.

  2. Make the sauce

    In a bowl, whisk together coconut cream (solid part only), chicken broth, nutritional yeast, oregano, and starch until smooth.

  3. Prep the sun-dried tomatoes

    Blot excess oil and chop sun-dried tomatoes. This keeps the sauce creamy and not greasy.

  4. Combine & simmer

    Add sun-dried tomatoes to the skillet with chicken. Stir in the sauce and bring to a gentle boil. Simmer 5 minutes, stirring occasionally, until thickened.

  5. Finish & serve

    Taste and adjust seasoning. Garnish with fresh basil. Serve over cauliflower rice, zucchini noodles, or with roasted vegetables.

Notes

Blot sun-dried tomatoes well to avoid excess oiliness. Always use the solid part of chilled coconut cream for the richest sauce. Leftovers keep well in the fridge for 3 days.
