- Salt and pepper to taste
- 4 (10-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 8 slices cooked turkey bacon
Instructions
- Scramble the eggs: Heat a large skillet over medium-high heat. Coat it with cooking spray or a pat of butter. Crack the 8 eggs directly into the skillet, seasoning with salt and pepper to taste. Stir and cook until the eggs are just set but still slightly wet, about 5 minutes.
- Assemble the burritos: Lay out the 4 flour tortillas on a clean surface. Divide the scrambled eggs among the tortillas, placing 1/4 of the egg mixture in the center of each. Sprinkle 1/4 cup of shredded cheddar cheese on top, and lay 2 slices of crispy turkey bacon on each tortilla.
- Wrap it up: Fold the bottom of each tortilla over the filling, then fold in the sides, and roll tightly closed.
- Store for later: Tightly wrap each burrito in plastic wrap. You can refrigerate them for up to 3 days or freeze for a longer shelf life.
- Reheat and serve: Microwave each burrito from frozen for 1 minute on each side or from the refrigerator for 30 seconds. Serve warm with a drizzle of hot sauce if desired.
