Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 pound sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix together the 2 cups of flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the 3/4 cup of milk until just combined.
  4. Turn out the dough onto a floured surface, knead gently, and roll it out to about 1 inch thick.
  5. Cut into rounds and place on a greased baking sheet.
  6. Bake for 15-20 minutes until golden brown.
  7. Cook the sausage in a skillet over medium heat until browned.
  8. Add the 1/4 cup of flour and stir to incorporate, cooking for another minute.
  9. Whisk in the 2 cups of milk gradually, stirring constantly until thickened.
  10. Season with salt and pepper. Serve the warm sausage gravy over the freshly baked biscuits.

Notes

Can be made ahead by preparing biscuit dough in advance. Leftovers store well for up to 3 days.
