A delightful and nostalgic Cookie Dough Cake with layers of fluffy cake and creamy cookie dough frosting.

- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup milk
- 1 cup cookie dough (store-bought or homemade)
- 1 cup butter, softened (for frosting)
- 2 cups powdered sugar
- 2 tablespoons milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- Whisk together flour, baking powder, and salt in a bowl. Set aside.
- Beat the butter and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually add the flour mixture to the butter mixture alternately with milk, starting and ending with the flour. Mix until just combined.
- Fold in the cookie dough until evenly distributed.
- Divide the batter among the prepared cake pans and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
- Beat the softened butter for frosting until creamy. Gradually add in powdered sugar, then stir in milk and vanilla until smooth.
- Frost each layer with cookie dough buttercream and stack the layers.
- Frost the top and sides of the cake, and decorate as desired.
Notes
You can bake the cake layers a day in advance and store them wrapped in plastic wrap in the refrigerator. Store leftovers in an airtight container for up to 5 days.
