Description

A delightful and nostalgic Cookie Dough Cake with layers of fluffy cake and creamy cookie dough frosting.


Ingredients

  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • 1 cup cookie dough (store-bought or homemade)
  • 1 cup butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a bowl. Set aside.
  3. Beat the butter and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Gradually add the flour mixture to the butter mixture alternately with milk, starting and ending with the flour. Mix until just combined.
  5. Fold in the cookie dough until evenly distributed.
  6. Divide the batter among the prepared cake pans and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  8. Beat the softened butter for frosting until creamy. Gradually add in powdered sugar, then stir in milk and vanilla until smooth.
  9. Frost each layer with cookie dough buttercream and stack the layers.
  10. Frost the top and sides of the cake, and decorate as desired.

Notes

You can bake the cake layers a day in advance and store them wrapped in plastic wrap in the refrigerator. Store leftovers in an airtight container for up to 5 days.
