- 2 cups all-purpose flour, plus extra for kneading
- 1 1/2 cups whole wheat flour
- 2 teaspoons cocoa powder
- 1 tablespoon granulated sugar
- 1 1/2 teaspoons salt
- 2 1/4 teaspoons instant yeast
- 1 1/4 cups warm water
- 2 tablespoons butter, melted
- 1/4 cup molasses
- 1/4 cup honey
- Rolled oats for topping
Instructions
- Combine all the flours, cocoa powder, sugar, salt, and instant yeast in your KitchenAid stand mixer.
- Mix together the warm water, melted butter, molasses, and honey in a medium-sized bowl.
- Make a hole in the center of your dry ingredients and pour in the water mixture.
- Knead the dough by hand for 5-8 minutes or use the mixer until the dough comes together.
- Oil another bowl lightly and place your kneaded dough ball inside, covering it with plastic wrap to rise for 2 hours.
- Divide the dough into 3 equal pieces and roll each into about a 9-inch log.
- Sprinkle the tops with rolled oats and score lightly if desired.
- Cover the loaves and let them rise for an additional 30 minutes while you preheat the oven to 350 degrees.
- Bake the loaves for about 30 minutes until golden brown, then cool on a wire rack.
