Ingredients

  • 2 cups all-purpose flour, plus extra for kneading
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons cocoa powder
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons salt
  • 2 1/4 teaspoons instant yeast
  • 1 1/4 cups warm water
  • 2 tablespoons butter, melted
  • 1/4 cup molasses
  • 1/4 cup honey
  • Rolled oats for topping

Instructions

  1. Combine all the flours, cocoa powder, sugar, salt, and instant yeast in your KitchenAid stand mixer.
  2. Mix together the warm water, melted butter, molasses, and honey in a medium-sized bowl.
  3. Make a hole in the center of your dry ingredients and pour in the water mixture.
  4. Knead the dough by hand for 5-8 minutes or use the mixer until the dough comes together.
  5. Oil another bowl lightly and place your kneaded dough ball inside, covering it with plastic wrap to rise for 2 hours.
  6. Divide the dough into 3 equal pieces and roll each into about a 9-inch log.
  7. Sprinkle the tops with rolled oats and score lightly if desired.
  8. Cover the loaves and let them rise for an additional 30 minutes while you preheat the oven to 350 degrees.
  9. Bake the loaves for about 30 minutes until golden brown, then cool on a wire rack.
