- 4 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup chopped vegetables (spinach, bell peppers, etc.)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- Whisk together the large eggs and cottage cheese until well combined and creamy.
- Stir in the shredded cheese, chopped vegetables, salt, and pepper.
- Pour the mixture evenly into the muffin tin cups, filling them about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool for a few minutes before gently removing them from the muffin tin. Serve warm or store in the refrigerator for later!
