- 1 cup milk
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the rolled oats and milk in a bowl; let sit for about 10 minutes to soften the oats.
- Whisk together the brown sugar, maple syrup, vegetable oil, and eggs in another bowl until well combined and creamy.
- Add the oat mixture to the wet ingredients and mix well.
- Mix together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined—do not overmix.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
