  • 2 large eggs

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the rolled oats and milk in a bowl; let sit for about 10 minutes to soften the oats.
  3. Whisk together the brown sugar, maple syrup, vegetable oil, and eggs in another bowl until well combined and creamy.
  4. Add the oat mixture to the wet ingredients and mix well.
  5. Mix together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  6. Fold the dry ingredients into the wet mixture until just combined—do not overmix.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
