Fluffy and tender pancakes that evoke nostalgia and warmth, perfect for a cozy breakfast.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Butter and syrup for serving

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Mix the milk, egg, and melted butter in another bowl until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t worry if there are a few lumps!).
  4. Preheat a griddle or non-stick pan over medium heat and lightly grease it with butter.
  5. Pour 1/4 cup of batter onto the griddle for each pancake.
  6. Cook until bubbles form on the surface, then carefully flip and cook until golden brown on the other side.
  7. Serve warm with a pat of butter, a generous drizzle of syrup, or even some fresh fruit for a delightful finish.

Notes

Make-ahead advice: Prepare dry ingredients the night before. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for future use.
