  • 12 oz fresh green beans (trimmed)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried parsley
  • Salt and pepper (to taste)
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley or grated Parmesan (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss together the halved potatoes, trimmed green beans, and sliced sausage in a large bowl with olive oil and seasonings.
  3. Spread the mixture evenly across the prepared baking sheet in a single layer.
  4. Roast in the oven for 30–35 minutes, flipping halfway through, until the potatoes are tender and golden.
  5. Serve hot from the oven, garnished with freshly chopped parsley or grated Parmesan if desired.
