- 1 tsp dried parsley
- Salt and pepper (to taste)

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss together the halved potatoes, trimmed green beans, and sliced sausage in a large bowl with olive oil and seasonings.
- Spread the mixture evenly across the prepared baking sheet in a single layer.
- Roast in the oven for 30–35 minutes, flipping halfway through, until the potatoes are tender and golden.
- Serve hot from the oven, garnished with freshly chopped parsley or grated Parmesan if desired.
